Mexican Street Corn Recipe

This is a real Mexican classic and the perfect side dish for a fun barbecue evening with friends or family. It is so easy and delicious to make and even beginners can cook these Elote in no time. Enjoy…
INGREDIENTS:
Skewers (let soak in water so they don’t burn on the grill)
Corn on the cob
3 Tsp of melted butter
For the sauce:
1 Lime
1/4 cup of Cilantro
1/4 cup of Mayo
1/4 cup of sour cream
1 tsp. of garlic
Tajin powder
1 package of Cotija cheese (Mexican Feta cheese, alternate regular Feta cheese)
STEPS:
1) Stick the skewers in the corn
2) Brush corn with melted butter, add spices (e.g. pepper, salt, onion powder)
3) Preheat over or grill on 400 degrees and grill for 10-15 minutes
4) Mix together hard sour cream, half mayo, lime juice, and garlic, and add the chopped Cilantro and some Tajin as well
5)Crumble the Cotija cheese in a separate bowl (optional you can add some lime zest to the cheese for some extra lime flavor)
6) Brush the sauce on the corn and then spoon on the Cotija cheese
7) Top with more spices like Tajin and serve
